Easy Cheesy Beefaroni
It’s time for softball conditioning again here at The Little Cottage. That means my husband, who is a coach, and my daughter, will be coming home around 7 o’clock ravenously hungry. I love having a hot, savory meal on the table when they walk in the door. I’ve been making this version of beefaroni for around 14 years. I had to modify the original recipe because the tomato sauce aggravated my acid reflux. I substituted Sweet Baby Ray’s Honey BBQ sauce and good ole’ fashioned ketchup for the throat-clenching tomato sauce. The result was a hearty, favorite family recipe that we make a few times per month.
Ingredients:
1 pound ground chuck, cooked and drained
16oz box elbow macaroni
3 cups Colby Monterey Jack shredded cheese
1 1/4 cups ketchup
1 1/4 cups Sweet Baby Rays Honey BBQ Sauce
salt (to taste)
cooking oil or non-stick cooking spray (not pictured)
Directions:
Preheat the oven to 350 degrees. Grease or spray a 9×13 baking dish.
Cook and drain 1 pound of ground chuck. Cook and drain 1 16 ounce box of elbow macaroni. Check out the gorgeous Pioneer Woman Celia colander. It makes cooking even more fun!
Combine the ground chuck and elbow macaroni in a large bowl, then mix in the ketchup and bbq sauce. Add 1 cup of Colby and Monterey Jack cheese, and mix well. Put the other 2 cups aside. Add salt liberally.
Press the beefaroni evenly into your greased or sprayed 9×13 baking dish. Top with the remaining 2 cups of cheese. Bake for 25 minutes, or until bubbly.
