Over the Rainbow Dessert Pizza
Indredients:
- Betty Crocker Sugar Cookie Mix (or similar)
- 1 egg (required for cookie mix)
- 1 cup (for cookie mix) plus 3 tablespoons (for icing) of butter
- strawberries, mandarin oranges, pineapples, (3) kiwi, and blueberries
- 8 oz cream cheese bar (room temperature)
- 1 1/2 cup of sifted powdered sugar
- pizza pan or round cookie pan
Instructions:
Preheat the oven according to the directions on your cookie mix. Follow the instructions on the package to make your sugar cookie dough. My pre-packaged mix required 1 stick of butter and 1 egg. Press the dough into a round pan. I used a 12″ deep dish pizza pan. At 350 degrees, it took about 12 or 13 minutes for my cookie pizza to cook completely. You will have to watch it, because the bake time will be different from rolled or dropped sugar cookies. Let it cool before applying the icing.
Soften 3 tablespoons of butter (microwave for about 20 seconds), and mix it with your room-temperature cream cheese. Sift the 1 1/2 cup of powdered sugar right into the butter and cream cheese mixture, then mix again. Spread the icing evenly onto the cooled sugar cookie pizza.
Wash and cut (peel the kiwi fruit with a potato peeler) your fruit if it’s fresh; then open and drain your cans of fruit. I used canned pineapple rings and mandarin orange slices. My strawberries, kiwi, and blueberries were fresh. You will need very small amounts of fruit. A pint of strawberries and blueberries will be plenty, with some leftover. I bought small cans of pineapple and mandarin oranges. You will need 3 kiwi fruit.
My rainbow only has 5 colors. Start with red, then add the orange, yellow, green, and blue fruit. There isn’t a wrong or right way to arrange the fruit, as long as it looks like a rainbow in the end. I wanted to make big cream cheese clouds under each end of the rainbow, but my children complained. Therefore, I did not make clouds.
