February Pinterest Challenge-Cranberry Pecan Chicken Salad Sliders
Welcome to the February Pinterest Challenge Blog Hop, hosted by My Pinterventures. The purpose of this Pinterest Challenge is to motivate all the participants of this hop (and you too) to not just pin, but to make it happen! This month, I chose to make Cranberry Pecan Chicken Salad Sliders. I’m loving the Pinterest Challenge. It’s hard to choose just one pin though, because I have 4 or 5 saved that I would love to try. After some deliberation, I decided to make Cranberry Pecan Chicken Salad Sliders. My pinspiration was my most-saved pin; Cranberry Chicken Walnut Salad. You can access the complete recipe here. I saved the pin after I ordered a chicken salad plate at a restaurant downtown. Month after month the pin that wasn’t really mine was saved by hungry individuals. So now I’m making my own chicken salad pin. Yeah!Ingredients:
- 2 cooked chicken breasts
- 1 cup dried cranberries
- 1/2 cup pecans (pecans overrule walnuts down here in the south)
- 1 tablespoon parsley
- 1/4 teaspoon dill
- 1/4 cup sour cream
- 1/2 cup mayonnaise
- lemon juice was not needed, because I didn’t use the apples from the original recipe
Instructions:
I cooked my chicken in the crock pot for 4 hours on high. You don’t have to add anything to it. I put extra chicken in there for dinner as well. Be sure to use a crock pot liner- it makes clean-up a lot easier later. See how the chicken makes its own juice? Add the pecans and cranberries, then stir. Add the spices. Add the sour cream and mayonnaise, then stir. I used Hawaiian rolls for my slider buns. The sweetness of the buns matched the sweetness of the Cranberry Pecan Chicken Salad. Cut the sliders 3/4 of the way, then add the chicken salad. This will keep your slider from falling apart while you’re eating it. Well, you’re done. This recipe tastes great, and is quick and easy to make. I eliminated a few things in the original recipe. I don’t like celery, so I doubled the amount of cranberries instead. I didn’t have any apples, but they would make an excellent addition to this recipe. I pictured the lemon juice with the ingredients, then realized it was probably used to keep the apples from turning brown. It tasted so good in its natural state, I didn’t add sugar or salt either. Be sure to pin this recipe. I’ll be counting my REAL chicken salad pins.These sliders sure look great on this little Oscar and Edgar Gutherz plate.

We make a very similar chicken salad (and when I have the apples they are amazing in it!); I’ve also tried it with halved grapes (again when I was out of apples) and like the added fruity taste. I just love the crunch of the pecans with the tartness of the craisins. Pinned.
