Fifteen Minute Banana Pudding

Banana pudding is a classic dessert that has never waned in popularity. However, the banana pudding of yesterday required cooked pudding with meringue topping. Today, you can make banana pudding that is fast, easy, and less calories than most other desserts. My recipe is 250 calories per cup, and requires only 5 ingredients. As an added bonus it only takes 15 minutes from start to finish.

Ingredients:

- 1 box of vanilla wafers (I used 60)
- 16 oz tub of whipped topping
- large (5.1 ounces) box of vanilla pudding
- 3 cups of 2% milk
- 3 bananas
- makes 12 servings, 250 calories each
Directions:
Line a medium-sized clear glass bowl or baking dish with vanilla wafers. You want to use clear glass, so your guests can see the pretty layers of your dessert.

Slice three bananas, and layer them on top of the vanilla wafers. I do not use overly ripe bananas. I don’t want my pudding to taste like rotten bananas later. It will, if your bananas are too ripe. Really ripe bananas are great for banana bread, but not banana pudding.

Mix and stir 3 cups of cold water into the vanilla pudding mix. The pudding will set in about 5 minutes. Pour it over the bananas and vanilla wafers. Some people use banana-flavored pudding, but I like vanilla much better in banana pudding.
Scoop the whipped topping on top of the vanilla pudding. Spread it around with a fork. Slide vanilla wafers around the rim of your dish. You’re all done! Serve yourself a nice cup of pudding in a pretty bowl!

**To figure out the calories per serving, I added up the calories of all the ingredients, then divided that amount by 12. I used the picture below to determine that my 1 cup serving was 1/12 of the entire dish

Kristie
