What does your family eat on Christmas morning? My husband is originally from South Texas, so Tex-Mex Breakfast Tacos are one of the things on our go-to menu for Christmas Day. I’m also adding Hazelnut Lattes this year. Check out my recipe, if you get the chance.

On With the Tex-Mex Breakfast Taco Ingredients!
- flour tortillas
- tater tots (I filled a medium-sized mixing bowl about half full.)
- 10 eggs
- salsa
- sour cream
- shredded Mexican cheese (Thanks Cabot Cheese!)
- 1/2 pound of mild pork sausage
- salt-if desired

This recipe couldn’t be easier. If you decide to make my Tex-Mex Breakfast Tacos, you’ll love them! Start with a big skillet; you will need the extra room to cook everything. Brown the sausage.

Microwave the tater tots for about 3 minutes to soften.

While the tater tots are cooking, whisk the eggs together, then add them to the cooked sausage. Cook until scrambled.

Add the tater tots and cook. Toss everything around with a spatula or wooden spoon.

Add salt, if desired. I usually salt my eggs before I scramble them, but either way works.

Your breakfast taco mixture is finished! Time to put out the tortillas. salsa, cheese, and sour cream.

Build your taco, and enjoy! Start with the skillet mixture, then add cheese, salsa, and sour cream.

These look so good! Usually we have cinnamon rolls for breakfast on Christmas morning since we have a big lunch with family. This year things will be different and we won’t be able to have that lunch, so I might have to fix these instead! 🙂
